place, you must send your registration and payment. This assures us a full class. If you
are unable to attend, you may send someone in your place. There are no refunds!

Thursday, September20, 2007- "Salute to Italy"(my favorite European country)

Serving Shrimp and Grits with Applewood Bacon, Tarragon Deviled Eggs, Salad of
Cantalope, Honeydew and Blackberries with Buttermilk and Peanut Dressing, topped
off with Lemon Spiced Bread Pudding for dessert

Tuesday, October 9, 2007 - "New Orleans Night"
If you've always wanted to know how to create a Fabulous Gumbo, making an authentic roux, come on out - for a Gumbo prepared with Andoulle Sausage, Seafood and Chicken, French Bread, Spinach Salad with Raspberry Dressing, Flaming Bananas Foster served with Vanilla Bean Ice Cream.

Our menu will be Macadamia Nut Crusted Sea Scallops with Mandarin Orange and
Poppy Seed Butter, Garlic Mashed Potatoes, Roasted Asparagus, Salad of Pear and
Gorgonzola over Arugula with Mango Basil Vinaigrette, Apple Brown Butter Jalousie.

Thursday, November 1, 2007 - "A Small Plates Dinner"
Five heavy but easy hors d'oeuvres add up to dinner - Tapas, as they do in Spain -
Create a dinner with a variety of small bites. Warm Piguillo (Pepper) and Crab Dip
served with Crusty Bread, Corn Cakes with Smoked Salmon and Herbed Cream
Cheese, Caramelized Onion and Mushroom Dip with Pita Chips, Molded Vegetable

Fashioned Cornbread Dressing, Spiced Cranberries with Orange and Rosemary,
Orange Zested Sweet Potato Souffle', Baked Sweet Onions with Asiago Cheese, and
Pumpkin Cheesecake with Bourbon Caramel Pecan Sauce.
